Scientists at the ICAR–National Dairy Research Institute (NDRI), Karnal, have developed a new patented technology that can extend the shelf life of fresh paneer from the usual 8–10 days to around 20–21 days.
The innovation relies on an Antimicrobial Coagulant Formulation (AMCF) designed to enhance storage stability and microbial quality without altering the traditional taste, texture, or overall quality of paneer.
This breakthrough addresses one of the most critical challenges in India’s dairy processing sector: the short shelf life of fresh paneer, which heavily restricts long-distance logistics, cold-chain distribution, and market reach.
AMCF Technology: Innovation 8–9 Years in the Making
The patented technology was led by Dr. Pradip Vishnu Behare, Senior Scientist in the Dairy Microbiology Division at ICAR–NDRI, along with his research team after nearly eight to nine years of rigorous development.

According to ICAR–NDRI Director Dr. Dheer Singh, the technology is fully ready for commercialization and technology transfer to dairy processors, cooperatives, and private startups.
While the AMCF technology provides a strong barrier against early spoilage, NDRI scientists noted that final real-world shelf life will still depend on good manufacturing practices (GMP), hygienic packaging, and maintaining consistent cold-chain temperatures (below 5°C).
